Large 8vo, illustrated with 12 plates and 85 figures in the text. ½ contemporary fawn sheepskin, spine with rubbed raised bands. First edition. Pasteur defined his work as follows: “This work is based on the same principles that guided my research on wine, vinegar, and silkworm disease… The theory of fermentation is a consequence of a vital phenomenon, a phenomenon of nutrition under specific conditions that places them in the category of ferments. He then describes fermentation and the brewing process, providing brewers with the technical means to produce a perfectly wholesome beer that can be stored indefinitely.”
